This one pot recipe is cozy and delicious. If you love pasta and French onion soup, you’re going to love this!
Here’a my one-portion, made in one pot French onion pasta recipe:
1/2 TBSP butter
1-2 tsp olive oil
1/2 a large onion, sliced thin
Garlic
Splash of Worcestershire sauce
Salt
Pepper
Thyme
1 c beef broth (maybe a little more depending on how your pasta is cooking)
3/4 c pasta
1/4 c half and half (can use heavy cream or milk)
1/4 c Gruyère cheese, shredded
In a pot on medium low heat, melt butter and add oil. Add in onion, stir regularly, and cook for up to 30 minutes. You’re looking for your onions to caramelize and turn brown. But you don’t want to burn them so keeping it on a lower heat will help with that. Add in garlic and stir. Cook for 30 seconds or until fragrant. Add in seasonings and Worcestershire sauce. Then add in pasta and beef broth and stir. Bring to a boil then reduce heat and let simmer for 15 to 20 minutes or until pasta is al dente. Turn off heat and add cream. You can also add the cheese in at this stage and stir, or you can top it with cheese when you serve it.
