"Quick & Easy Indian Vegetable Recipes"
1. Boondi Ki Sabzi
A light and comforting dish where spring onions provide moisture and flavor.
Ingredients:
* Boondi: 1 cup
* Spring Onions: 1 bunch (finely chopped, both white and green parts)
* Oil: 1-2 tablespoons
* Cumin Seeds (Jeera): 1 teaspoon
* Asafoetida (Hing): A pinch
* Turmeric Powder: 1/2 teaspoon
* Red Chilli Powder: 1 teaspoon (adjust to taste)
* Salt: To taste
* Fresh Coriander: A handful (finely chopped)
Instructions:
* Heat oil in a pan and add cumin seeds and hing.
* Add the finely chopped spring onions and sauté briefly. Do not overcook; keep them fresh to retain moisture.
* Add turmeric and red chilli powder. Cook for a minute to remove the raw spice smell.
* Gently fold in the boondi. Be careful not to overcook so the boondi retains some texture.
* Add salt and a fresh garnish of coriander. Toss gently and serve immediately with roti.
2. French Beans Sabzi
A vibrant and healthy stir-fry with a touch of coconut.
Ingredients:
* French Beans: 250g (finely chopped)
* Oil: 1 tablespoon
* Mustard Seeds: 1 teaspoon
* Asafoetida (Hing): A pinch
* Ginger-Green Chilli Paste: 1 tablespoon
* Baking Soda: A small pinch (to maintain green color)
* Fresh Scraped Coconut: 2-3 tablespoons
* Lemon Juice: 1 teaspoon
* Fresh Coriander: For garnish
* Water: As needed
Instructions:
* Heat oil in a pan and let the mustard seeds crackle. Add hing.
* Stir in the ginger-green chilli paste for a spicy punch.
* Add the chopped beans and sprinkle a pinch of baking soda.
* Cook on medium flame, adding a little water as needed. Pro Tip: Do not cover the pan while cooking to keep the beans' bright green color.
* Once tender, add the fresh coconut, coriander, and a squeeze of lemon juice. Toss and serve.
3. Jeera Aloo (Cumin Potatoes)
A classic, slightly crispy side dish that pairs with any meal.
Ingredients:
* Potatoes: 3-4 medium (boiled and cubed)
* Oil: 2 tablespoons
* Cumin Seeds (Jeera): 1.5 teaspoons
* Asafoetida (Hing): A pinch
* Red Chilli Powder: 1 teaspoon
* Crushed Coriander Seeds: 1 teaspoon
* Roasted Cumin Powder: 1/2 teaspoon
* Dry Mango Powder (Amchur): 1/2 teaspoon
* Salt: To taste
* Fresh Coriander: For garnish
Instructions:
* Heat oil and add a generous amount of cumin seeds. Let them crackle to release their aroma.
* Add hing, red chilli powder, and the rest of the dry spices (crushed coriander, roasted cumin, and amchur).
* Add the boiled potato cubes and mix gently to coat every piece with the spices.
* Cover and cook for a few minutes until the potatoes are slightly crisp on the outside.
* Adjust salt, garnish with fresh coriander, and serve.
4. Soft & Fluffy Phulka (Roti)
The perfect accompaniment for the above vegetables.
Ingredients:
* Whole Wheat Flour (Atta): 2 cups
* Salt: To taste
* Water: Approx. 1/2 cup (adjust as needed)
* Ghee: For drizzling
Instructions:
* In a bowl, mix flour and salt. Gradually add water to knead a soft, non-sticky dough.
* Cover the dough with a damp muslin cloth and let it rest for 15 minutes.
* Divide the dough into equal-sized small balls.
* Dust with dry flour and roll into thin, even discs.
* Cook on a medium-hot tawa until light spots appear on both sides, then place directly over a high flame to let it puff up.
* Remove, drizzle with ghee, and serve hot.

I am from south india though live in USA now- we make those green beans curry with a dash of fresh grated coconut added last for garnishing the curry – and make it often in summer and when green beans are freshly available a lot in the market – chef- I wanted to know why you add that teaspoon of baking soda to the green beans ? It’s already green and fresh so why add baking soda? To keep the green color? Or to cook faster ? I think adding baking soda kills the taste and makes the curry mushy tasteless and moreover – it destroys all the nutrients in it like vitamin
B, C and D etc as baking soda kills the vitamins in it ! Please don’t add baking soda / in south India we make same curry green fresh by washing beans in ice cold water after washing it 2-3 times n rinsing with tap waterdon’t add haldi to it if you want it green / just sauté it and add coconut and spices you added without baking soda- I promise it tastes fresh and yummy without baking soda too! 😮otherwise a great healthy recipe !
