French Onion Mac & Cheese
Ingredients
2 tbsp oil
2 lb yellow or Vidalia onions, sliced
2 Tbsp unsalted butter (+ more for greasing)
2 Tbsp flour
1 tsp paprika
1 tsp cayenne pepper
2 thyme sprigs (+ more for garnish)
Salt + pepper
2 cup heavy cream (or whole milk)
1/2 cup beef stock
8 oz Gruyère, grated
6 oz white Cheddar, grated
6 oz Fontina, grated
1 lb cavatappi or elbow pasta
Instructions
Bring salted water to a boil and cook pasta 1 minute shy of al dente. Meanwhile, in a large ovenproof skillet over high heat, sauté onions in oil until deeply caramelized, deglazing with splashes of water as needed. Stir in butter, flour, salt, pepper, paprika, cayenne, and thyme and cook until lightly toasted, then remove thyme sprigs. Add cream (or milk) and beef stock, stirring until smooth, then mix in most of the Gruyère, Cheddar, and Fontina (reserve some Gruyère for topping) until melted. Fold in the pasta, transfer to a greased baking dish, top with remaining cheese. Broil and serve!

That look great.
They are literally not caramelised you. You are slowing the sugars burn, but they do burn and will have a bitter after taste.
I use beer to caramelize my onions faster
