Please what ever you do… don’t take me seriously! I love to have fun with cooking. Me? Not serious. I need to maintain a certain level of classic British ‘bring me some Monty’ to get through the day and slide the noise to one side. The food? Oh ya. That’s an experience and something you need to get in your bowl asap!

French onion soup with a raclette cheesy twist. I’ve used 10 onions, a variety of regular yellow onions, red onions, and Roscoff onions. Sauté those down until they’re dark sticky and caramelised. Add a little sugar partway through and it’ll help the caramelisation and the colour and of course, the deep umami flavour.
Added plenty of chopped garlic, thyme, red wine (0% in my case), A splash of balsamic, a splash of soy and some vegetable stock. Add bay leaves and let it simmer. Finish with crusty bread and cheese on the top and whack under the grill.
