Beef Bourguignon is one of France’s most iconic comfort dishes, born in the Burgundy countryside where slow cooking transformed tough cuts of beef into something extraordinary.

Ingredients:

• 400g beef chuck, cut into bite-size pieces
• Salt and pepper to taste
• Flour (for coating)
• 2 tbsp olive oil
• Handful chopped onion
• Handful chopped celery
• Handful chopped carrots
• 3 cloves garlic, chopped
• 2 bay leaves
• 1 rosemary sprig
• 1 tbsp tomato paste
• 2 cups red wine
• 1/2 cup beef broth
• Mushrooms, sautéed in butter
• Pearl onions, sautéed in butter

Instructions:

Season beef with salt, pepper, and coat lightly in flour.
Fry until golden brown and set aside.
In same pan, sauté onion, celery, carrots in olive oil.
Add garlic, bay leaves, rosemary, and tomato paste.
Return beef and add red wine and beef broth.
Cover and simmer on medium-low heat for 1.5 hours.
Sauté mushrooms and pearl onions in butter.
Add to stew near the end and simmer.
Serve hot with mashed potatoes.
