Jalapeño Capsicum French Toast – Melted Cheese Version
Ingredients
• 2 eggs
• 2 tbsp milk
• 2 tbsp finely chopped capsicum
• 1–2 tbsp finely chopped jalapeños
• 2 tbsp finely chopped onion
• 2 tbsp coriander
• Salt to taste
• ¼ tsp chilli flakes
• 4 bread slices
• ½ cup grated cheese
• oil for cooking
1. Whisk base
Beat eggs + milk. Add capsicum, jalapeños, onion, coriander, salt,
2. Dip & cook – side 1
Heat oil on medium-low.
Dip bread lightly in mixture.
Place on pan and spoon extra veggie-egg mix on top.
Cook till golden and set.
3. Flip carefully
Cook the other side for 30–40 seconds.
4. Add cheese AFTER flip
Sprinkle cheese generously on top.
Cover with lid for 45–60 seconds so cheese melts beautifully.
5. Remove lid and cook 15 seconds uncovered for slight crisp bottom.
