A roasted sweet potato and grapes Tartine, topped with a poached egg and served with a shallots and lettuce salad. This is so simple to make and so delicious ! It makes such a luscious lunch, which would also be perfect if you have some friends over for lunch 🙂 METHOD for 2 1. Roast 2 sweet potatoes with olive oil and salt for 15min at 180C. Then add to the tray a bunch of dark grapes, drizzle with olive oil and roast for another 10min. 2. Make the shallot sauce with a diced shallot, 3 tbsp red wine vinegar, 3 tbsp olive oil, 1 tsp flaked salt. 3. For the poached egg, simmer some water with 3 tbsp vintage and poach for 3 min each 2 eggs and set aside. 4. Toast and butter a tartine, top with the sweet potato, egg, grapes, some feta and pumpkin seed. Serve the shallot sauce on top of the lettuce.
