Long weekend vibes call for something special! Forget sweet pancakes—let’s go French and savoury with these Croque Madame Pancakes. Continental perfection when you’ve got time to cook! 🇫🇷

Dijon White Sauce:
30g butter
30g flour
240ml milk
30g Dijon mustard
Salt & pepper to taste

Melt butter, whisk in flour, and slowly add milk while stirring. Season and stir in that big dollop of Dijon. Set aside.

You also need to make some pancake batter
Eggs (1 per pancake for frying)
Gruyère or Swiss cheese, freshly grated
Quality ham (Parma, could even be a salami if that’s what you had)

Cook your pancake, flip it, and spread on the Dijon sauce. Fry your egg sunny-side up. Slide the pancake onto a plate, grate on cheese, fold over two slices of ham, and top with your fried egg.
That’s it! A classic French galette with classic French flavours.
