Ingredients
• Potatoes – 4 large (high-starch)
• Cold water + ice
• Salt – 1 tbsp
• Vinegar / lemon juice – 1 tbsp
• Cornflour – 1 tbsp
• Rice flour – 1 tbsp (optional)
• Oil – for frying

Method (Short & Clear)

1️⃣ Cut & wash
Cut potatoes into even fries. Wash 2–3 times till water is clear.

2️⃣ Ice soak
Soak fries in ice-cold water for 30–60 min.

3️⃣ Blanch
Boil water with salt + vinegar. Add fries, cook 3–4 min only. Drain.

4️⃣ Dry completely
Air dry on towel 15–20 min.

5️⃣ Light coating
Toss fries lightly with cornflour + rice flour.

6️⃣ First fry
Fry at 150–160°C for 3–4 min (pale). Cool completely.

7️⃣ Rest / freeze (secret)
Freeze 30–60 min or refrigerate 2–3 hrs.

8️⃣ Second fry
Fry at 180°C till golden & crispy.

9️⃣ Season hot & serve
