This is one of the most common everyday versions — flavorful, mildly spiced, and pairs perfectly with roti, dal, and rice.
Ingredients (serves 3–4):
• 250–300 g French beans (haricot verts / green beans) — wash, trim ends, and cut into 1–1.5 inch pieces
• 2–3 medium potatoes (aloo) — peeled and cubed (optional but very common)
• 1 medium onion — finely chopped (optional)
• 1–2 green chilies — slit
• 1 tsp ginger-garlic paste (or finely chopped)
• ½ tsp cumin seeds (jeera)
• ½ tsp turmeric powder (haldi)
• ½–1 tsp red chili powder (adjust to taste)
• 1 tsp coriander powder (dhania powder)
• ½ tsp garam masala (optional, added at end)
• Salt to taste
• 2–3 tbsp oil (mustard oil or vegetable oil)
• Fresh coriander leaves for garnish
Steps:
1. Heat oil in a pan or kadai on medium heat. Add cumin seeds and let them splutter.
2. Add chopped onion (if using) + green chilies + ginger-garlic. Sauté until onions turn light golden.
3. Add potato cubes, sprinkle a pinch of salt, and stir-fry for 3–4 minutes.
4. Add the chopped French beans, turmeric, red chili powder, coriander powder, and salt. Mix well.
5. Cover and cook on low-medium heat for 10–15 minutes, stirring occasionally. The beans and potatoes should become tender but not mushy (sprinkle 1–2 tbsp water if needed to prevent sticking).
6. Once done, sprinkle garam masala and garnish with coriander leaves.
7. Serve hot as a side dish.
Total time: ~25–30 minutes.
