Julia Child–inspired French onion soup, with a few personal touches.
Ingredients:
3 lb onions, thinly sliced
3 tbsp butter
1 tbsp oil
1/4 tsp sugar
3 tsp salt (plus more to taste)
3 tbsp flour
1/2 cup dry white wine
2 quarts beef stock
Black pepper
For serving:
Toasted baguette or old bread
Grated cheese (I used smoked gouda + white gouda with cranberries)
Method:
1. Cook onions in butter and oil, covered, 15 min.
2. Add sugar and salt; cook low and slow until golden (about 40 min).
3. Mix in the flour and stir into the stock, add wine, and simmer for 45 min.
4. Season to taste.
5. Top with bread and cheese; broil until golden.
