Another of the interests the FIGHTING IRISH Group is involved in, is a boutique Winery.
We own and operate a boutique winery on the estate that will produce Cabernet Sauvignon, Shiraz, Chardonnay and Spanish Ruby and White Port varietals.
When ageing, we will employ the 8,000-year-old Georgian tradition of using terracotta qvevri’s prior to French Oak barrels.
Large 500 litre qvevri’s are buried in the floor of the alcohol room where they are left in the ‘Cradle of Mother Earth’ to be nurtured and cared for with minimal human intervention or disturbance prior to barrelling.
