These savory mini tartes tatin are a festive twist on a classic French dessert.
Sweet cherry tomatoes, red pepper, honey, olives, and herbs caramelize under golden puff pastry — then flip into the most beautiful, glossy little tart.

🧂 Ingredients:
400 g cherry tomatoes, halved
1 red bell pepper, finely diced
2 tbsp olive oil
1 tbsp honey
1 tsp Italian herb blend
Red chili flakes, to taste
Black pepper, to taste
50 g black olives, sliced
1 sheet puff pastry
1 egg yolk (for brushing)
Fresh basil, for garnish

🍳 Instructions:
Preheat oven to 355°F (180°C).
Line a baking sheet with parchment. Mark 8 circles using a cookie cutter.
Inside each circle: drizzle olive oil + honey, add herbs, chili, pepper, olives.
Place cherry tomatoes cut side down, sprinkle with diced red pepper.
Cut 8 pastry circles and place on top. Press gently.
Brush with egg yolk and pierce lightly with a fork.
Bake 20–25 minutes until golden.
Cool slightly, flip carefully, garnish with basil, serve warm or room temp.
