3-4 boneless skinless chicken thighs @danosseasoning Cajun Seasoning Avocado oil (for cooking) 4 tbsp butter 1 tbsp minced garlic 5-8 oz baby spinach 1½ cups heavy cream 4 oz Parmesan cheese Italian herbs (to taste and for garnish) Olive oil (for toasting bread) 1 loaf of French bread 8 oz mozzarella cheese
Instructions:
– Preheat a skillet and drizzle in some avocado oil. Sear the chicken thighs evenly on both sides over medium heat until cooked through. Once done, remove from heat. – In a separate pan, melt the butter and add the baby spinach. Sauté until wilted, then mix in the minced garlic and heavy cream. – Stir in the Parmesan cheese and Italian herbs, cooking on medium heat until the sauce thickens. – Slice the French bread in half lengthwise, brush with olive oil, and toast on broil for a few minutes until crispy. – Chop the chicken into small chunks. Remove the toasted bread from the oven and generously spread the Alfredo sauce on top. Sprinkle a bit of mozzarella cheese, then add the diced chicken and cover with remaining mozzarella. – Garnish with fresh parsley and a sprinkle of Dan-O's Cajun seasoning. Place back in the oven on broil until the cheese is melted and bubbly. – Serve hot with extra Alfredo sauce on the side!
