Ingredients for 9 Crispy Quiches

Crust

All Purpose Flour 425 G
Unsalted Butter 259 G (Hard & cold)
Salt 1 Tsp
Water (Chilled) 3-4 Tbsp
Filling

Chicken Mince 500 G
Onion (Finely chopped) 2 No.s Medium
Cream 400 ML
Eggs 5 No.s
Cheddar Cheese (Grated) 250 G
Olives (Sliced) 2 Tbsp
Mushrooms (Sliced) 2 Tbsp
Spring Onion 1 No.s (Optional)
Spinach (Blanched) 1/2 cup (Optional)
Salt 1 Tsp (1/2 Tsp for chicken & 1/2 tsp for batter)
Black Pepper powder 1 Tsp (1/2 Tsp for chicken & 1/2 tsp for batter)
White Pepper powder 1 Tsp (1/2 Tsp for chicken & 1/2 tsp for batter)
Oregano 1 Tsp (1/2 Tsp for chicken & 1/2 tsp for batter)
Cooking oil 2 Tbsps.
Recipe (Crust)

– Add all purpose flour in a deep & cold bowl
– Add salt in it and mix
– Make small cubes of hard unsalted butter and add in the flour
– With the help of a cold masher, mix the flour and butter thoroughly
– Keep it in the refrigerator & prepare batter for filling in the meanwhile.
Batter
– Add cooking oil in a pan, put finely chopped onion in it & saute
– Add mince and fry until it changes its color
– Add salt, white pepper, black pepper & oregano and mix well
– Let it cook at medium low until extra moisture evaporates
– When it is done, keep aside to cool down at room temperature
– Now, add it in a wider bowl with cream and eggs one by one, mix well
– Now add grated cheddar cheese, olives, mushrooms & spinach
(For spinach, take half cup of spinach leaves and blanch. Then with a tablespoon of butter, fry it with salt & pepper.)
– Add salt, white pepper, black pepper & oregano, adjust the flavors according to your pallet.
– Keep it in the refrigerator
– Preheat the oven at 180 C or 375 F
– Flatten the prepare dough with a rolling pin
– You need not to glaze them with butter or oil as there is quite enough butter in the dough.
– Place the flatten dough in the molds
– Now make holes in the dough with the help of a fork
– Cut square pieces of parchment paper measuring 7″ X 7″
– Place it over the dough and add some light weight grains like beans, pulses or wheat to avoid bubbling while baking
– Bake at 180 C or 375 F for 12-15 minutes
– After baking, remove the grains and store for next baking
– Remove parchment papers and then pour batter in molds
– Slow down to over at 160 C or 325 F
– Bake again at this temperature for another 12-15 minutes or unless it is done
– Your yummy, crispy, creamy snack is ready to present

• Use COLD butter for flaky crust
• Blind baking prevents soggy bottom
• Custard ratio: 1 egg to ½ cup cream
• Let quiche rest before slicing (patience pays!)
• Reheats beautifully next day
