This tastes just like a delicious dance of shallots, wine and scallops 👌 Bon appetit ! 2 shallots 2 tbsp of olive oil 320g of risotto rice 180g of white wine 820g of stock (either vegetable or fish stock) 200g of freshly grated parmesan 400g of petoncles (small scallops) 2 tbsp of butter Sea salt & grounded pepper METHOD Follow the video and slowly add the stock in three rounds and cover on medium / low heat. It is done once the rice is just tender – make sure you don’t over cook it.
