French Onion Bean Soup
Serves: 2
Do you love the classic French Onion Soup but wish it was more of a complete meal? This version includes white beans to make it more filling yet keeps all the delicious flavours of the soup!
Ingredients:
1 large onion
2 garlic cloves
1 tbsp balsamic vinegar
splash white wine (optional)
540ml can cannellini beans
1 sprig rosemary (or 1/2 tsp dried rosemary/oregano)
1 bay leaf
200ml vegetable broth, more as needed (to cover beans)
100ml milk/cream
cornstarch slurry (if not using cream)
1/2 tsp white miso paste
salt, pepper – to taste
oil
To Serve:
bread
parsley (optional)
cream (optional)
Method:
1. Thinly slice onion and mince garlic. Dissolve miso paste in some hot water.
2. In a large pot over medium-low, cook onions with a pinch of salt for 30-60 mins until caramelized. Add water as needed to deglaze & prevent burning.
3. Stir in garlic until fragrant.
4. Pour in balsamic vinegar and stir to coat. Optionally add wine (over medium-high ~3 mins), otherwise skip.
5. Pour in beans & liquid, bay leaf, rosemary/oregano, broth, and pepper. Bring to a boil, then simmer 15-20 mins. Optionally blend some.
6. Remove bay leaf and stir in milk, a slurry to thicken, and miso paste.
7. Season as needed, then serve alongside bread.
