Why does everyone fry their veggies for soup in oil? Just cook it in water without the greasy flavor. I cook meat bones first for 1-1.5 with grated onions and carrots and herbs, then add everything else it various point during the cooking process depending on how long each ingredient cooks. Take the bones out, remove any meat off the them and put the meat back into soup. Season with salt to your taste. Make a big pot to last several days. Soup tastes better the next day anyway. You can use beef bones, Turkey necks, chicken legs. Whatever meat you prefer for the base for any soup.
