INGREDIENTS FOR TARTE
1. Semi-Whole Grain Sweet Tarte Base (Pâte Sucrée semi-complète)

A slightly nutty, crisp tart shell — perfect for fruit tarts.
Ingredients:

180 g semi-whole wheat flour (T110)
100 g unsalted butter, cold and cubed
50 g powdered sugar
1 large egg
1 pinch fine sea salt
½ tsp vanilla extract (optional)

Almond Paste for Baking (Pâte d’Amandes)

Used as a thin layer under fruit (like in tarte aux fraises) to keep the crust crisp and add flavor.
Ingredients:
100 g almond flour (finely ground almonds)
15g self raising flour
100 g powdered sugar
2 eggs
1–2 drops vanilla extract (optional, but enhances flavor)
Pinch of salt

Mix until smooth and spreadable

Quick Caramel Sauce (No Butter)
A rich caramel made with just sugar and cream — perfect for drizzling.
Ingredients:
100 g granulated sugar
120 ml heavy cream (35% fat),
Pinch of sea salt (optional, for salted caramel)

Pastry Cream (Crème Pâtissière)
Smooth and rich, used to fill fruit tarts, éclairs, and more.

Ingredients:
500 ml whole milk
1 vanilla bean (split and scraped) or 1 tsp pure vanilla extract
100 g egg yolks (about 5 large yolks)
100 g granulated sugar
40 g cornstarch
25 g unsalted butter (optional, for gloss and richness — add at the end)
