I worked for a chef from Avignon that showed me some cool techniques around rilletes. One that I use a lot is to heat the fat to ~300F, then take a ladle with garlic and a tiny bit of grated lemon peel in it. It's lowered in and out of the fat gently until it stops reacting heavily, then it's dumped in and it's all allowed to cool. By then the garlic is cooked just right. We'd then add that fat and a healthy amount of chopped parsley (+ some chives & thyme) throughout. This was to be served for catering events right away so wouldn't store well w/the herbs. People used to go nuts for the stuff, and it was cheap to make
