Am I the only one who thinks filet mignon doesn't benefit from reverse sear as much? It doesn't have enough fat, nor is it thick enough. If you sear it first and then bring it up to temp, it should have a more intense crust.

Still – i agree to the first statement. Filet mignions are the rice of beef. Always tastes good when everything around is is well made, tastes like nothing when everything around it is not there – but still not bad.
