Ingredients:

5 large onions, thinly sliced

3 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

1 tablespoon flour

1 liter beef stock

½ cup dry white wine

Salt & pepper to taste

Baguette slices

1 cup grated Gruyère cheese

Instructions:

In a large pot, melt butter with olive oil over low heat. Add onions and cook slowly (about 25–30 minutes) until soft and golden.

Add sugar and cook for 10 minutes more to caramelize.

Stir in flour and cook for 1 minute.

Pour in white wine and beef stock. Bring to a boil, then simmer for 20 minutes.

Season with salt and pepper.

Toast baguette slices and top with cheese.

Place the soup in ovenproof bowls, float a slice of bread on top, sprinkle with more cheese, and broil until golden and bubbly.

Serve hot and enjoy the deep, comforting flavor!
