Butternut squash & parsnip soup
A tasty soup that blends the mellow taste of butternut squash with the sweetness of parsnip and a warm spicy backnote, perfect for lunch or supper, served with fresh thick cut bread and butter.
Ingredients
750g butternut squash
300g parsnips
3 tablespoons olive oil
3 cloves garlic
1 large onion
Large sprig of thyme
Sea salt and freshly ground pepper
1 litre of chicken stock
I teaspoon of cumin powder
2 tablespoons of creme fraiche
