As a professional pastry chef for 15 years now & helping my parents as a child on the weekends, my weekends have always been busy (mine starts at 3am 😅) But even when life is busy, hectic, or the days are long, I’m always trying to find ways to make it cozy & finding pleasure in the small things, like talking with our friend from the fromagerie, exploring the flea markets, talking to all of our wonderful customers from @caferevelotion, & my most favorite, baking.

With over 10 years of experience in the coffee industry, Lev makes the most delicious coffee, & I provide the pastries. We have been so overwhelmed by all the support we have received since starting, & we are so excited for the new things we are planning for the future of our business♥️

And a busy chilly day calls for the most delicious, easiest, & most comforting dinner ever – raclette. Raclette is one of the best discoveries I made while in France, I mean who doesn’t like melty cheese goodness with potatoes, charcuterie, bread , etc! And our tiny machine is one the best and cheapest investments we’ve made😂 I’ve linked ours in my linktree, link in bio!

After a raclette, you’ve eaten so much that you’re probably not hungry anymore, but I live with a raclette pro, so dessert is always a necessity 😂 but this cake is more so apple than cake, so it’s healthy right!? Feel free to double the cake portion if you want a larger cake layer.

Upside down apple cake (7in/17cm)
-2 to 3 apples, peeled & sliced
-40 grams butter
-40 grams brown sugar
-pinch of salt and cinnamon

Cake layer
-60 grams of butter, room temp
-40 grams brown sugar
-40 grams regular sugar
-1 egg – room temp
-100 grams flour
-3 grams baking powder
-3 grams cinnamon
-pinch of salt
-pinch of nutmeg
-splash of vanilla
-50 grams of milk, room temp

Cook the butter & sugar over medium heat for a minute to thicken & bubble. Pour into pan (only grease the sides, not the bottom). Add the apples.

Cream the butter & sugars till light and fluffy. Add in the egg and vanilla. Whisk together the flour, baking powder, & spices. Add to butter mixture, & fold in till almost incorporated, then add the milk & fold in till just incorporated. Pour over apples & bake in preheated oven at 180C/350F for about 35-40 minutes. Remove from oven & let cool for about 10- 15 minutes, then invert over your plate. Et voila bon appetit!
