Ingredients
For the soup:
• 6 large yellow onions (about 3lbs), thinly sliced
• 1 stick butter unsalted butter
• 1 tsp salt
• 2 cloves garlic, minced
• 6cups beef broth , 3 cups chicken broth (half beef, half chicken for lighter flavor)
• ½ cup dry white wine ( completely optional )

• 3 bay leaf
• 2–3 sprigs fresh thyme
• Salt and pepper to taste
For topping:
• 1 baguette, sliced into ½-inch rounds
• 2 cups grated Gruyère cheese (or mix of Gruyère + Swiss)

🔥 Instructions
1. Caramelize the onions
In a large heavy pot or Dutch oven, melt butter over medium heat.
Add onions and stir to coat them. Sprinkle with salt and pepper.
Cook slowly (about 35minutes), stirring often, until onions are deep golden brown and jammy. Don’t rush — this is where all the flavor comes from!
2. Add garlic & deglaze
Stir in the garlic and cook 1 minute.
Add wine (if using)
3. Add broth & herbs
Pour in the broth, bay leaf, and thyme.
Bring to a simmer, then lower heat and cook uncovered for about 15–25minutes.
Remove herbs and bay leaf, and season with salt and pepper.
4. Toast the bread
While soup simmers, toast the baguette slices under a broiler or in a toaster until crisp.
5. Assemble & broil
Ladle hot soup into oven-safe bowls.
Top each with a toasted baguette slice and a generous handful of cheese.
Place bowls under a broiler for 2–3 minutes until cheese is melted and bubbling.

A very sharp knife is key for avoiding onion tears! When the knife is too dull it crushes the onion as it cuts, aresolizing the juices which makes you tear up. Hope this helps anyone reading 🙂
