apple pie filling: 4 medium sized apples, peeled and cubed 2 tablespoons butter 1/4 cup brown sugar 1/2 tsp cinnamon 1 tsp vanilla Cornstarch slurry (2 tsp cornstarch + 1 tablespoon water)
custard: 2 eggs 1 cup heavy cream 1/2 tsp vanilla
1 tablespoon butter for cooking the French toast
cinnamon swirl bread (see previous video)
Directions: 1. To make the apple pie filling: into a skillet melt the butter then add the brown sugar and cinnamon. Stir and cook for a few minutes. Add the cubed apples and stir. Cook for about 5-7 minutes covered until slightly softened but should still have a bite to it. 2. In a small bowl combine the cornstarch and water, add to the skillet to thicken the apple filling. Stir and remove from heat, add the vanilla and stir. Let cool while preparing the custard. 3. In a bowl whisk together the eggs, heavy cream and cinnamon. Be sure to cut bread into thick slices. Add apple pie filling on a slice of bread and top with another slice. Dip into the custard making sure it is absorbed into the bread, about 30 seconds on each side. 4. Melt a tablespoon of butter in a skillet then cook the French toast on low heat for about 2-3 minutes on each side until golden brown. 5. Remove from skillet and add your toppings (butter, maple syrup and powdered sugar) top with whipped cream (optional) and enjoy!
Tips: 1. Using different variety of apples gives the filling a unique and more flavor. 2. Add more sugar to the apple pie filling if desired. 3. If using thinner pre-sliced bread, you don’t need to soak it in the custard for too long just about 5 seconds on each side. 4. Wipe skillet after each batch of French toast and add more butter. You can also use a combination of oil and butter to cook the French toast.
