French Onion Pasta with Costco’s Pumpkin & Bats Ravioli ($12.47)

Ingredients
3 large yellow onions, very thinly sliced
3 tbsp butter
1 tbsp olive oil
1 tsp salt
2 cloves garlic, minced
½ tsp dried thyme
¼ cup dry white wine
¾ cup beef broth
½ cup half-and-half
½ cup grated Gruyère
1 tsp worstchire sauce or balsamic vinegar for balance

Instructions
1. Caramelize the onions
In a large sauté pan, melt the butter with olive oil over medium heat.
Add onions and salt; cook slowly, stirring often, for 45-50 minutes until deep golden brown.
Add thyme and garlic, cooking 1–2 minutes until fragrant.

2. Deglaze
Pour in wine (or broth) and scrape up all the brown bits from the pan.
Let it reduce by half (about 3–4 minutes).

3. Build the sauce
Reduce heat to low and add the cream. Stir gently until smooth.
Turn off heat
Gradually add the Gruyère cheese, stirring until melted and creamy.
Taste and season with fresh ground pepper

4. Finish with ravioli
Boil the pumpkin & bat-shaped cheese ravioli according to the package (usually 3–4 minutes)

5. Serve
Top with more Gruyère and fresh thyme.
