French Onion Soup
Ingredients:
2-4 TBSP EVO
4 cups sweet onion, sliced
2 TBSP shallot, sliced
¼ cup sherry wine, deglaze
1 tsp brown sugar
1- 2 oxtails, seasoned
1 tsp hot sauce
2 tsp worcestershire sauce
¼ tsp ground nutmeg
2 TBSP roasted garlic
1 tsp thyme
2 cups beef, veal or duck stock
½ cup red wine
kosher salt & ground black pepper, to taste
french bread
le gruyere AOP, finely shredded
Method:
Caramelize onions hardcore until good and caramelized, it takes time along with your oxtails. Deglaze with sherry, add a splash of hot sauce, drop in an oxtail or two and then add the remaining ingredients and reduce on low to medium heat and add more liquid and season, as needed. Finish with french bread and Le Gruyere AOP and broil and serve.
