Shaker, Hawthorne + fine strainer, jigger, chilled flute or coupe.
Steps
Chill the glass. Briefly chill the flute/coupe in the freezer or with ice water; empty.
Combine: In the shaker add 30 ml gin, 15 ml lemon juice, 10 ml simple syrup.
Add ice & shake: Add ice, then shake 8–10 seconds until cold.
Fine-strain: Strain into the chilled flute or coupe.
Top: Slowly top with 60–90 ml chilled sparkling wine. Do not stir vigorously — a gentle lift-stir (1 short turn) is fine if needed.
Garnish & serve: Express a thin lemon twist over the surface and place it neatly. Serve.
Balance notes
For a drier profile: use 60 ml sparkling and 8–10 ml syrup.
For a softer profile: use 90 ml sparkling and 12–15 ml syrup.
Zero-proof option: replace gin with a 0.0% botanical alternative and sparkling with 0.0% sparkling wine or soda.
