No special skills needed — just a bowl, a mixer, and a madeleine pan! First, butter the madeleine tin liberally. Next, melt 3oz of chocolate with 5 tablespoons of butter in the microwave for 30 seconds. In a medium bowl, beat 3 egg whites until almost stiff. Sift in 1/4 cup of cocoa, 1/4 cup of flour, 3/4 cup of powdered sugar and 1/4 teaspoon of salt. Fold the dry ingredients into the egg white. When almost combined, pour in the melted chocolate and butter. Continue to fold until everything is well combined. Scoop the batter into the tins. Chill for 1 hour before baking at 375° for 12 minutes. Allow to cool and unmold. Dust with powdered sugar and serve.
