Today I’m sharing the classic French Madeleines — soft, buttery little cakes with a hint of lemon. These are elegant, delicious, and perfect for coffee, tea, or even as a gift in a pretty box.

We’ll whisk eggs and sugar until fluffy, add honey for softness, warm melted butter with lemon juice, and fold in the flour. After resting the batter, the Madeleines are piped, baked until golden, and optionally glazed with lemon icing.

They’re light, moist, and irresistible — the perfect French treat at home.

📋 Recipe (20 Madeleines)
   •   2 eggs
   •   ½ cup (95 g) sugar
   •   1 tbsp (25 g) honey
   •   ¾ cup (100 g) flour
   •   1 tsp (4 g) baking powder
   •   7 tbsp (95 g) melted butter
   •   Squeeze of lemon juice

Glaze
   •   ½ cup icing sugar
   •   1–2 tsp lemon juice

Baking
   •   Preheat oven to 420°F (215°C)
   •   Lower to 370°F (188°C) and bake 9–10 minutes
   •   Optional: return to oven at 302°F (150°C) for 1 minute to dry the glaze
