6 slices of thick-cut bacon (or lardons), diced
1 medium onion, finely chopped (optional, traditional recipes may omit)
1 cup (100 g) grated Gruyère or Swiss cheese
1 ¼ cups (300 ml) heavy cream (feel free to skip if too heavy)
¾ cup (180 ml) whole milk
    4 large eggs
    ¼ tsp ground nutmeg
Salt & black pepper, to taste

    👩‍🍳 Instructions
    Prepare the crust
    Preheat oven to 375°F (190°C).
Place pie crust into a 9-inch tart or pie pan.

    Cook the filling
In a skillet, cook bacon until crispy. Remove and drain on paper towels.
(Optional) Sauté onions in the bacon fat until soft.
    Make the custard
In a bowl, whisk together eggs, cream, milk, nutmeg, salt, and pepper.

    Assemble
Sprinkle bacon, onions (if using), and cheese evenly on the crust.
Pour custard mixture over the filling.

    Bake
Bake at 375°F (190°C) for 30–35 minutes, until the custard is set and top is lightly golden.
    Cool slightly before slicing.
