Ingredients:
Onion
Chicken sausage
Sharp cheddar cheese

Beef broth
Water
Clarified butter

Recipe:
– Cut onion into thin half moons. Set aside and cube sausage into chunks. Heat a pot on medium high heat and brown the sausage. Once the sausage is evenly browned and there’s a nice fond at the bottom of the pot, it’s done.
– Reduce the heat to low and add clarified butter. Once it’s melted and hot, add the onion. Make sure all the onion is covered in butter and you scrape all the fond off the bottom of the pot. Season with a generous sprinkling of salt.
– Mix the onion every 3-5 minutes. If you’ll want to add sugar, add it about 10 minutes after the onion has been in the pot. You’ll mix every couple minutes until the onion is a deep golden brown color. I said it would take 30-40 minutes….it’ll take longer than that.
– Once the onion is beautifully caramelized and your patience is gone, add garlic to the pot for a quick sauté. Add tomato paste and allow it to cook in for 3 minutes. Now’s when you’ll pour in 6 cups of broth, 1 cup of water, bay leaf and dried thyme. When it simmers, dump in the sausage. Bring to a simmer again and let it go for 10-15 minutes.
– While the soup simmers away, cut a baguette into slices and top with shredded sharp cheddar cheese. Toast it in an oven set to 400°F (204°C). It’ll be done when the bread is toasted and cheese is melted, it won’t take long.
– When your soup is done, grab yourself a bowl and fill it up. Top with more shredded cheese and the toast.
– It may not be true French Onion Soup, but when you have this, you won’t even want it!
