Classic French Onion Soup for Two
This recipe is a simplified version of the classic for a smaller serving size.
Ingredients:
2 large yellow onions, thinly sliced
2 tablespoons butter
1 clove garlic, minced
1/2 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
2 cups beef broth (or a combination of beef and chicken broth for a lighter flavor)
1/2 teaspoon fresh thyme leaves (or 1/4 teaspoon dried thyme)
Salt and black pepper to taste
2 slices of French baguette or other crusty bread, about 1-inch thick
1/2 cup shredded Gruyère cheese
