FRENCH ONION SOUP (2/18)

Ingredients
100g butter @kerrygold_uk
2 tbsp olive oil
2.5kg onions (unpeeled weight)
2 tsp sugar
5g fresh thyme (optional)
3 garlic cloves (finely chopped)
400ml white wine
1 tbsp Worcestershire Sauce
2 tbsp plain flour
2 rich beef @knorruki stock pots (or beef stock cubes)
2 litres water
2 tsp salt

Topping Ingredients
French baguette
Comte cheese (or gruyere)
fresh chives

Method
1. Melt 100g of butter in pan before adding in peeled and thinly sliced onions, sugar and thyme – cook on medium/high heat for 30mins with lid on the pot (this will help sweat the onions down), checking after 15 minutes or so and giving it a stir
2. After 30 minutes, add garlic and Worcestershire Sauce then cook for further 30 minutes at medium/high heat (with lid still on)
3. Remove the lid from the pot, turn the heat up to high and cook for 5 minutes, whilst stirring pretty much constantly, until you achieve caramelisation on the onions – this will help to darken the colour of the soup
4. Pour in the wine and continue to cook on high heat until it’s nearly all absorbed into the onions
5. Add plain flour and stir through – this will provide a slightly thicker consistency to the soup
6. Add beef stock pots (or stock cubes) and 2 litres boiling water
7. Leave on medium/high heat for approx. 60 minutes (this will ensure the onions are totally soft)
8. Finally, add salt to season and get ready to serve
9. Turn on the grill and select your serving bowl, whilst preparing slices of french baguette for each bowl to layer on top.
10. Ladle soup into bowl, place bread on top, and sprinkle with finely grated Comte
11. Place in high heat grill, watching closely, until cheese is bubbling and you start to see a little colour – then serve with some freshly chopped chives as garnish
