  1. STEAK FRITES with Mushroom Black Peppercorn Garlicky Cream Sauce & Truffle Fries! 🥩

    Mushroom Black Pepporcn Garlicky Cream Sauce
    (2 servings)
    *3 Mushrooms, sliced
    *1 tbsp minced garlic
    *1 tbsp salted butter
    *1/2 cup heavy cream
    *1/3 cup cognac (sub for white wine, brandy, sherry wine)
    *3/4 cup beef stock
    *optional: 1 tsp corn starch (if it doesn’t thicken up to your liking)

    Instructions:
    *Sauté mushrooms until water seeps out.
    *Add in garlic and saute for another minute, making sure not to burn the garlic.
    *Deglaze with cognac and let simmer for 1-2 minutes.
    *Add in beef stock and let simmer for another 2-3 minutes.
    *Add in heavy cream and butter and let simmer until thickened (about 4 minutes)
    *If you get impatient like I do, add 1 tsp of corn starch to the sauce and let simmer for 1 minute until thickened.
    *Serve with your favorite cut of steak!

    Double Fry French Fries
    *Cut russet potato to desired size and soak in an ice bath for 15-30 minutes.
    *Fill a pot with avocado oil (or your choice of oil), and heat on medium.
    *When oil is hot, batch fry your French fries for 6-8 minutes.
    *Strain on a paper towel and let cook for 10 minutes.
    *Raise the heat on the stove for the pot of oil to medium-high.
    *Fry French fries again for 3-4 minutes and immediately remove to a big bowl, salt, add truffle oil if desired, and serve immediately.

  2. You shouldn't use a nice cognac for cooking, only for drinking. Just a regular one is good enough for cooking. Same goes with all alcohol.
