This French Onion Pasta Bake takes everything you love about French onion soup — slow caramelised onions, rich beefy sauce, and gooey Gruyère — and transforms it into the ultimate comfort food. Rigatoni is tossed through a glossy onion gravy, layered with three cheeses, and baked until golden and bubbling.

I’ll walk you through every step: how to properly caramelise onions, why pasta water is liquid gold, and the secrets to layering cheese for maximum flavour. Plus, I’ll have details of how to make it gluten-free or alcohol-free if that suits your kitchen.

  1. Oh wow, this went straight onto my shopping list. I also feel like you can sneak in some plant protein without really noticing it, which I will absolutely do. Thank you, Chef!

  2. Perfect timing! Just harvested three beds of onions and was going to turn the smallest ones into caramalised onion chutney…but this looks like wayyyy more fun for a batch-cook fest!

  3. I've done something like this at 2am after a late night drinking. I went with what I had in the refrigerator and it was these two dishes. It was great (under my current condition) I always thought I would make it for real, Good job!

  8. Oh my days, that looks absolutely delicious, and I’m really looking forward to trying it. I’m going to write a shopping list right now for Waitrose, and get my delivery first thing tomorrow morning 😊.

  9. Hah, I had a bit of a chuckle about the weight cut comment.
Omitting ~100 calories of wine, but using 3 types of cheese 😀

  10. Would it be possible to cook the pasta in the french onion concoction? More stock could be used to hydrate the pasta and the pasta would release its own starch. It would be a matter of how soupy the french onion concoction needs to be for the same effect as cooking the pasta separately.
