Hello and welcome back to Easy Peasy Foodie Channel!
Today, we’re making a beautiful and flavorful French classic — Ratatouille.
It’s a colourful mix of fresh vegetables perfectly simmered in a rich tomato base, and it’s completely vegan and gluten-free.

Ratatouille is incredibly versatile — serve it as an appetizer, a side dish, or even use it as the base for another meal, like my vegetable casserole (coming in the next video!).

📌 Ingredients:
– 200g eggplant
– 200g zucchini
– 200g onions (about 2 medium)
– 200g peppers (100g red + 100g yellow)
– ½ cup (125ml) olive oil
– 1 clove garlic
– Pinch of salt
– 2 tsp red wine vinegar
– 1 cup (250ml) crushed tomatoes (or passata)
– Fresh basil (6–10 leaves)
– Freshly ground black pepper to taste

📖 Instructions:
1. Dice eggplant, onions, zucchini, and peppers into similar sizes.
2. Heat olive oil in a large pan, add garlic and onions with a pinch of salt, cook until softened.
3. Add peppers, then eggplant and zucchini — cook until slightly softened.
4. Add red wine vinegar, cook for 1 min, then stir in crushed tomatoes.
5. Simmer, then add fresh basil, salt, and pepper.
6. Rest covered for 10 minutes before serving.

✨ Serving Ideas:
– Pair with crusty bread
– Serve over rice or pasta
– Use as a base for casseroles or stews
