Remy’s lightning mushroom moment in Ratatouille has lived rent-free in my head since 2007 – so I finally decided to recreate it as an actual recipe. Using real chanterelles, authentic French goat cheese (yes, I hunted down a version of tomme de chèvre de pays), La’Aquilla saffron, and French pâte à choux, I made a real-life version of that iconic scene… including a smoker, duxelles filling and a bit of dramatic weather.
