"This pizza is really lacking something." That's sad. I was really rooting for this one. Anything that breaks the mold is on my list to try.
I think what you have here is a design flaw. Potatoes, unless they are fried in oil, will act like flavor killers. The water and starch muddles the flavor on top. That's why you need a lot of gravy and added salt to make mash potatoes flavorful. Putting the "normal" amount of sauce on this will not be enough. They should form the crust, par fry it, and then you finish in the oven. That would give you a really crispy flavorful crust. This is just mash potato pizza.
I didn't see it on your first slice, but on the second one I saw floppy crust. That's not good. It's been a while since I had Tombstone, but it used to have a great crust that would crisp up real nice. 20 minutes at 425F should have been ample time for this to become rigid. Interesting idea, bat execution.
