Ingredients:
2 large chicken breasts, fillets so you have 4
1 1/2 tsp paprika
1 1/2 tsp garlic powder
1 tsp salt
Cracked black pepper
1 1/2 tbsp olive oil
1 cup heavy cream
3/4 cup chicken broth
2 tosp butter
2 tbsp Dijon mustard
1 medium onion, chopped
3 minced garlic cloves
1/2 cup grated Asiago
1 tbsp fresh thyme roughly chopped
Additional salt and pepper to taste
Mashed potatoes and vegetables or salad for serving
Directions:
Filet your chicken breasts and place the 4 pieces in a bowl with paprika, salt, pepper, garlic powder, and olive oil, mixing well until evenly coated, then set aside.
Chop your onions, and garlic and begin preparing your mashed potatoes now if serving with chicken.
Heat a large cast iron skillet over high heat, then pour a couple tsps of olive oil and cook the chicken until browned on both sides and cooked through (internal temp 165 F). It should take about 4-6 minutes per side.
Remove the chicken from the pan, then add the butter, onions, and garlic and cook for two minutes until softened.
Add mustard, broth, thyme, and cheese, and mix until cheese is melted and combined into the sauce, then add your cream and mix until it is smooth.
Place the chicken back in the pan, cook for 5 more minutes, then serve with mashed potatoes and vegetables. Pour sauce generously over everything and enjoy!
