    Sauce preparation

    2. Add milk and thicken the sauce: Gradually whisk in 5 cups of whole milk (or half-and-half) until smooth. Bring to a boil, then reduce heat and cook, whisking, until thickened.
    3. Add cheese and seasonings: Remove from heat and stir in the shredded cheddar, Gruyère, mozzarella, and Parmesan, along with salt and pepper, until melted and smooth. Adjust seasoning to taste, keeping in mind the saltiness of feta.
    4. Combine pasta and cheese sauce: Mix the cooked 1 pound of macaroni with the cheese sauce. 

    Baking and finishing
    1. Assemble and bake: Transfer to a greased baking dish. You can add extra shredded cheese, including feta, in layers or on top.
    2. Breadcrumb topping (optional): For a crunchy topping, combine 1 cup panko bread crumbs with 3 tablespoons olive oil or melted butter and sprinkle over the mac and cheese.
    3. Bake at 350°F (175°C) until bubbling and golden (10-25 minutes).
