3–4 large potatoes (preferably Russet or any starchy type)

Cold water

2 tbsp corn flour (optional, for extra crispiness)

🔪 Preparation Steps:

1. Peel & Cut:
Wash and peel the potatoes. Cut them into thin, even strips (like classic fries).

2. Soak in Cold Water:
Soak the fries in cold water for 30 minutes to 1 hour (removes excess starch and makes them crispier).

3. Boil Lightly (Blanching Step – Optional but Best):

Boil water, add fries and cook for 2–3 minutes only.

Strain immediately and let them dry on a cloth or tissue.

Chill in the fridge or freezer for 15–30 minutes (this helps firm them up).

4. Dust with Corn Flour (Optional):
Toss the fries in 1–2 tbsp corn flour for that extra crunch.

🍳 Cooking Methods:

A. Deep Fry Method (Double Fry for Best Results):

Heat oil in a kadhai or deep pan.

First Fry: Fry on medium heat until soft but not golden (~4–5 minutes). Remove and drain.

Second Fry: Increase heat to high and fry again until golden and crispy.

Drain on tissue paper.

B. Air Fryer Method:

Preheat air fryer at 200°C (392°F) for 5 mins.

Toss fries in 1 tbsp oil and air fry for 15–18 minutes, shaking halfway.
