  1. Excellent – really appreciate a vegetarian recipe. I don't have to adapt. Yay! Looks delicious.

I'm a professional cook who has a vegetarian girlfriend, and I've found the two best ingredients for producing meat-like flavor without meat for sauces or stews or whatever are (1) dried mushrooms, as here, and (2) Marmite, a spread made from yeast. So much so that I often use them now to enhance jus, demi-glaces, fonds de veau and the like with meat.

  3. I'heard you many times saying careful no colouration but never explaining why. I love colouration and the enhanced taste it is bringing. What could be the reason to not want it? Thumb up for this dish nevertheless!

  4. Some people are quite silly! Just watch, he could be speaking French and you will the recipe and technique! I do not know French but can follow along.
