I love French cuisine, however I have never tasted financiers yet. I'm slightly reserved about making brown butter, the same way I have fear of making caramel. But I suspect if I do it once or twice, I'll get used to it and won't be afraid anymore. Btw, I'm perplexed whenever I hear the recommendations of European butter for baking, is American butter really significantly worse? What content of fat do you have in the States? Mine is 82%, otherwise according to law it cannot be called 'butter'.
