Asparagus is in season, give this a go. This is a dish that you can pretend you’re being healthy with, despite the sauce containing half a pack of butter.
The sauce is the most laborious aspect, so start with this.
– Make a vinegar reduction with white wine, vinegar and tarragon stalks
– Mix egg yolks with the reduction and slowly stream in the clarified butter
– If it splits add a splash of cold water
Gently fry the asparagus until cooked through. I added a load of crispy prosciutto as garnish, to create a truly tasty dish
