I love pot roast and the recipe I use is so simple and perfect for lazy cooking. I do half a roast since my crockpot is smaller but a whole or half works
1 Stick of Butter (makes it super tender and juicy) 1/2 Packet of Au Jus Gravy Mix 1/2 Packet of Ranch Salad Dressing Mix About 4-9 Peppercini’s and some of the juice (you can do more or less depending on your preferred spice level) Cook on low for 8 hours
I make this, but I add a pouch of Mccormick ajau mixed with 1/4 cup water and just pour over the top layer of onions. It makes the gravy a little thicker and just adds more depth of flavor. Also I turn the leftovers into French dip sandwiches, one of my favorite lunches.
Honestly is so weird to me see Americans or Canadians for that matter, cook idk why Im European, cooking is cooking, dont get me wrong, i just dont understand all the canned stuff, all the croc pot and weird kitchen tools and mostly how the hell they always find a way to push a whole stick of butter in any recipe? I literally just made french onion pot roast for dinner tonight. Let me share my recipe that’s hands down better than this one but still easy.
3-4 pound beef chuck roast ▢ 2 tablespoons vegetable oil ▢ 1 large yellow onion thinly sliced ▢ 2 cans Condensed French Onion Soup 10.5 ounces each ▢ 4 cloves garlic minced ▢ 2 tablespoons Worcestershire sauce ▢ 1 teaspoon dried thyme ▢ 1 teaspoon salt ▢ ½ teaspoon black pepper Instructions:
Season the chuck roast with salt and pepper. Heat oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side. Transfer to the slow cooker. Pour the French Onion soup and Worcestershire sauce on top of the roast. Top with the sliced onions, garlic and seasonings. Cover and cook on low for 8-10 hours, until the meat is tender and easily shreds. Shred the meat in the slow cooker and mix with the onion gravy.
**I do brown the meat first because it is 100% worth it & allows me time to prep the other items. **I also strain my cans of French onion soup because my girls don’t like the onions that come in it.

Brown it before, and I use gravy instead of cream of whatever Campbell soup.
