    Personal changes i would have loved:

    Sriracha to have a stronger hit of spice to it

    For a single person, i really didn't need both the head and collar, couldnt finish all the meat, would have rathered one or the other and a carb companion especially a wild rice would have smashed it.

    Felt it described Fallow quite well, I'm not the target market I thought I might be. Felt very targeted to upmarket pre show meals or company business meals. Meant to food didnt have as much confidence in their flavours, whether it was acid, heat, salt etc. and it meant that the service didnt feel amazing for a couple on a date with multiple pairs being cramped into the corner pretty tightly for sharing plates. Also wouldnt recommended the potato waffle if you're planning to share like it was recommended, half a quail egg isnt great.

    Did feel more aimed at a money generating production than other similarly upmarket places like pachamama (would very much recommend). Love the videos though, very inspiring for a home cook.

  2. In Portugal we enjoy cod cheeks as a delicacy but this way of roasting the entire head is new to me and it looks delicious!

  3. I always eat the fish heads when they are fried cause its crispy and because it was marinaded before frying, it clings onto the marinade very well

  4. Takes courage to put these kinds of unusual parts on the menu. Absolutely love this!
