First off you did it wrong, trim it up (keep the trimmings) season it with salt pepper, cumin. Add water to the bottom of the roasting pan, place a onion and dried chilies in the water, place the trimmings on top. Cover it with foil, thrown in the oven at 275 for 4hrs, increase 25 degrees every hour and a half until you reach 425, the final hour take off the fat trimmings. when your done you shouldn't even be able to slice it, it should fall apart when you touch it. Be sure to season it well
