French Fries 2nd Best Method:
1. cut fries and rinse 3 times in cold water before soaking for 1 hour in cold water
2. dry fries and then blanch for 5-7 minutes in 4 quarts of water with 1 tbsp salt and 2 tbsp white vinegar
3. strain fries and let steam for 2 minutes before spreading out on a sheet pan and letting them cool down to room temp.
4. place them on a sheet pan and pour over a generous amount of hot neutral oil (350 f, 176 c) before placing in a 400 f (205 c) oven.
5. bake for 15 minutes before removing and tossing, place fries back in the oven and bake for a additional 15-20 minutes. (if using convection oven times will be much shorter)
6. drain on paper towel and immediately season before serving.

I buy store name frozen fries & deep fry them in a frying pan of Crisco. That's all you need to do.
ive been using vinegar in the water soak prior to cooking for decades (i worked at a pit beef stand that did it in the late 90s in maryland). it was a game changer, makes the best fries youll ever eat.
fine salt plz. flaky is wrong for fries.
That pre blanching followed by freezing before the second cook is exactly the method ShotGunRed used to create duplicate McDonalds fries. https://www.youtube.com/watch?v=0j9GGW6KsAo
It's disgusting. Nobody in Belgium will eat that.
As you worked in the Netherlands, you should know that 99.99% of the people here have a deep fryer in their house
DO NOT DO NOT DO NOT DO NOT DO NOT
Use a mandolin without a guard.
Please don't.
I usually cook my fries abd onions in the left over oil from the hamburger i cooked
Curious if this would improve sweet potato fries??
Don't use vinegar in hot water. Instead, use lemon or lime juice during the cold water soak
By the time you are finished with your rinsed and double cooked oven fries, I am back from McDonald's with fresh fries that cost less in the end.
or just buy a bag of Kirkland fries from Costco and put them in the air fryer. srsly bro show how to make enough for 4 ppl or gtfo
This is an S Tier video. New sub.
So we should use 3 gallons of water to make a couple of fries? Sounds like a program to follow.
Ore Ida, frozen "fast food" fries. If you know, you know.
This is a nice video…but with all the various methods you do, it would be nice if you had listed the final steps of the best fries. Is it soak and rinse three times, soak for 12 hours, freeze, then… ? Just a final recap/recipe would have made this much more helpful.
I have a question about freezing them, does anyone know how I can do so without them freezing into one solid block?
I'm sure these fries are amazing! but if I am being honest, not trying to take 3 hours and 21 steps to make fries lol.
Why not just fry them in the pot of oil you have on the stove instead of bothering with another pan in the oven?
14:00 Cook the fries on an oven rack divided into squares (so they are less likely to fall through). They will brown more evenly.
The spoons to measure the vinegar are gigantic
Can't you get to the point faster? I only made it to 12:00 minutes. Finally lost interest.
It's funny to realize that the washed potatoes are coming off more "easily," likely not due to the washing itself, but rather because of the choice of oven tray. However, rinsing your fries in water is essential. Instead of three quick washes, consider rinsing them once and then soaking them in water for 20 minutes to achieve even better results.
I'm going to "like" the video. Explaining the different methods of making fries at home was well done. All of those methods take much time to do. I like what I see in your steak fries the best. I might try that one.
Many of us don't have the time to do it right like in this video. Many of us don't plan the next nights meal. We get the thought of wanting fresh home fries tonight while at work and think it can be done in an hour. I've tried. I would be embarrassed to serve it to someone but I think it was better than fast food fries. For me. Store bought frozen fries turn out better than mine and are tasty enough for me.
Sargent Gilbert is a straight O.G.
Dude, anyone ever tell you that you have a face for radio? 🤪
That grin said spiking the spud was not in the script
Question for you regarding first and second method. For the second method, you said it was the same as the first except for the rinsing. But I didn't see any oil there. Did you miss that step, or accidently edit that out?
Good to know. Thnx
Just fry the fry…
I love this dude
My mom picked up a giant block of beef tallow like 8 months ago. We were using it for making home made dog food because it's super cheap locally and healthy. Like just put a little in the mix with ground beef, pork, chicken etc. Their coats are so gorgeous after we started that lol.
Anyways, one day we were making ribs and fries. I decided to put some tallow in a pot and double fried the fries in it. Oh my god.. SO good. that's all I use now when making french fries. Do it folks, it will change your fry game!
The freezing trick sounds really good! I currently don't rinse off the free starch, and instead of boiling I use the microwave so I don't need to fill a whole pot of water. Gonna have to implement these techniques!
So basically, do them like roast potatoes but with emphasis on the cold water soaking first (or, try that with roast potatoes I bet it works well there).
And yeah if you can have home made prepared ahead frozen fries ready to go in the oven with oil, how are the commercial ones not better than that? xD I know the biggest brand in my country buys good quality potatoes too, so it's not that. Maybe they'd need you to do the oil part and they don't want liability for that.
whats that saying when people use their hands to much while speaking? Soon be leaving cant stand the over dramatic gestures. Get to the point. WAAAAAAYYYYY to much hands.
Good luck cleaning your oven
You saw this idea on tik tok but the execution could be Better. Pro Tip: preheat your pan for 5 minutes so you fries don’t stick
